A tea-time classic

Serves 10 slices

Serving Info:

One serving contains 0.8g of your daily requirement of 1.5-2.4g of plant stanols

Ingredients:

  • - 60g Benecol® Buttery Spread
  • - 200ml very hot strong tea
  • - 200g mixed dried fruit
  • - 150g apple, peeled and grated
  • - 2 eggs, beaten
  • - 75g light brown sugar
  • - 300g self raising flour
  • - 2 tsp mixed spice
  • - 60g Benecol® Light Spread for spreading
  • - You will need a 900g (2lb) loaf tin

Method:

  1. Lightly grease the tin with a little of the Benecol® Buttery Spread and base line with baking parchment.  Place dried fruit in a large bowl and pour over the tea.  Cover with cling film and leave to soak for 10 minutes.  Remove the cling film, stir in the Benecol® Buttery Spread and the apple.
  2. Preheat the oven to Gas Mark 4/180ºC/fan oven 160ºC.  Beat in the eggs and sugar and sift over the flour and spice.  Mix well and spoon into the prepared tin.  Bake for an hour to 1 hour 15 minutes until a skewer inserted comes out clean.  Cool in the tin for 10 minutes then turn out onto a wire rack to cool completely.  Serve sliced with Benecol® Light Spread.  Store in an airtight container for up to 5 days.
     

Tip

  • You can use various combinations of dried fruit, so long as the total weight is 200g - chopped, figs, prunes and dates all work well.
