A tea-time classic

Serving Info:

One serving contains 0.8g of your daily requirement of 1.5 - 2.4g of plant stanols

Ingredients:

  • - 225g (8oz) Self raising flour
  • - 10ml (2 tsp) Baking powder
  • - 5ml (1 tsp) Ground cinnamon
  • - 150g (5oz) Soft brown sugar
  • - 50g (2oz) Shelled walnuts, chopped coarsely
  • - 100g (4oz) Carrot, grated
  • - 2 Medium sized ripe bananas
  • - 2 Medium eggs, beaten
  • - 150ml (5 fl oz) Light olive oil
Filling:
  • - 200g (8oz) Benecol® Soft Cheese Spread
  • - 15ml (1 tbsp) Walnut oil
  • - 15ml (1 tbsp) Icing sugar, sifted
  • - Zest of 1 orange

 

Recipe: Carrot Cake

Method:

  • Preheat the oven to 180°C/170°C Fan/Gas Mark 4. Grease and line 2 x 20cm/ 8 inch sandwich tin.
  • Put all cake ingredients into a large mixing bowl and beat together well.
  • Divide the cake mixture between the two prepared tins and bake for about 45-50 minutes. Cool on a wire tray.
  • Once cooled, make the filling by beating together the Benecol® Soft Cheese Spread, walnut oil, icing sugar and orange zest.
  • Use about half of the mixture to sandwich cakes together. Spread the remaining topping on top of the cake and swirl decoratively with a knife.
