A lighter version of a traditional Yorkshire recipe with a lovely lemon tang

Ingredients:

  • - 15g Benecol® Buttery Spread, melted
  • - 60g Benecol® Soft Cheese Spread
  • - 50g ricotta cheese
  • - 15g caster sugar
  • - ½ lemon, finely grated zest and juice
  • - ½ tsp vanilla extract
  • - 40g sultanas
  • - 2 x 25g sheets filo pastry
  • - Freshly grated nutmeg
     
  • - You will need a bun tray
     
Recipe: Lemon Curd Tarts

Method:

  1. Preheat the oven to Gas Mark 4/180ºC/fan oven 160ºC. Lightly brush the bun tray with a little of the melted Benecol® Buttery Spread.
  2. Beat together the Benecol® Soft Cheese Spread, ricotta, sugar, lemon zest and juice, and vanilla and set aside.
  3. Brush 1 filo sheet with the melted Benecol® Buttery Spread and cut into 6. Use to line the bun tray. Repeat with the other sheet, lying the rectangles at an angle to the first piece. Crumple the edges so that it looks pretty and creates a container for the filling. Spoon the cheese mixture into the pastry and sprinkle over the nutmeg. Bake for 10 minutes or until the pastry is crisp and golden. Delicious served warm.
