Oven roasted autumn fruit

One serving contains 1.2g of your daily requirement of 1.5-2.4g of plant stanols

Ingredients:

  • - 450g plums, halved and stoned
  • - 25g Benecol® Buttery Spread
  • - 1½ tbsp muscovado sugar
  • - ½ tsp cinnamon
  • - 1 orange
  • - 1 tsp icing sugar
  • - 80g Benecol® Soft Cheese Spread

 

Recipe: Roasted Buttery Plum

Method:

  1. Preheat the oven to Gas Mark 6/200ºC/fan oven 180ºC.  Place the plums cut side up in an ovenproof dish so that they sit snugly in 1 layer.  Dot with the Benecol® Buttery Spread and scatter over the sugar and cinnamon.
  2. Finely grate the zest from the orange and set aside.  Squeeze the juice from the orange and pour over the plums.  Roast for 20-30 minutes until soft and oozing.  They may need a little longer depending on their ripeness.
  3. For the orange cream, beat the orange zest and icing sugar into the Benecol® Soft Cheese Spread and chill until required.
  4. Serve the plums hot or warm with a dollop of the orange cream cheese alongside.
     

Tips

  • You can freeze the cooked plums, defrost thoroughly and warm through in a medium oven. (Please refer to the manufacturers handbook)
  • For an extra treat, serve with 80g amaretti biscuits on the side or crumbled over the top.
