Rosti is a Swiss dish consisting mainly of potatoes

One serving contains 0.8g of your daily requirement of 1.5-2.4g of plant stanols
Ingredients:
- 200g potatoes, grated
- 50g leek, shredded finely
- ½ tsp poppy seeds
- 15g sunflower seeds
- 25g Benecol® Olive Spread
- 2 rashers lean back bacon
Method:
Place the grated potato in a colander and push out as much liquid as possible. Combine with the leek and seeds in a mixing bowl and season with black pepper. Divide into 6 balls.
In a large frying pan, heat the Benecol® Olive Spread until sizzling. Add 3 of the balls and squash flat with a spatula. Cook, turning regularly for 3-4 minutes until golden on both sides. Remove from the pan and keep warm whilst cooking the other rosti.
Meanwhile preheat the grill to medium and cook the bacon for 2-3 minutes or until crispy. Serve 3 rosti each with the bacon on top.
Tip
You could serve this with a large green salad for lunch.
