Ingredients:

  • - 25g Benecol® Buttery Spread
  • - 2 large field mushrooms
  • - 4 medium tomatoes, halved
  • - 2 x 75g slices dark rye bread
     
Recipe: Mushroom and Tomato Toast

Method:

  1. Preheat the grill to medium. Line a grill pan with foil. Dot the mushrooms with half the Benecol® Buttery Spread and season with black pepper. Place under the grill with the tomatoes, cut side up and grill for 8-10 minutes until soft.
  2. Add the rye bread to the grill pan and toast, turning once until crispy.
  3. To serve spread the rye toast with the remaining Benecol® Buttery Spread and top with the mushrooms and tomatoes and any pan juices.
     

Tip

  • If you prefer, serve the mushrooms and tomatoes on top of granary or wholemeal toast.
