Serving Info:
One serving contains 0.8g of your daily requirement of 1.5-2.4g of plant stanols
Ingredients:
- 50g Benecol® Olive Spread
- 40g ground almonds
- 1 bunch spring onions, chopped
- 150g watercress, roughly chopped
- 1l hot vegetable stock
- 2 tbsp curly parsley, chopped
- 250ml soya milk
Method:
Melt the Benecol® Olive Spread in a large pan: add the spring onions and cook gently for a couple of minutes. Add the watercress, ground almonds and stock bring to the boil and simmer for 4-5 minutes. Stir in the parsley.
Transfer to a blender or use a stick blender to blend the soup until smooth. Return to the pan, add the soya milk and warm through.
