Leek and Potato Rosti with Bacon

Description

Rosti is a Swiss dish consisting mainly of potatoes

One serving contains 0.8g of your daily requirement of 1.5-3g of plant stanols

Method

1. Place the grated potato in a colander and push out as much liquid as possible. Combine with the leek and seeds in a mixing bowl and season with black pepper. Divide into 6 balls.
2. In a large frying pan, heat the Benecol® Olive Spread until sizzling. Add 3 of the balls and squash flat with a spatula. Cook, turning regularly for 3-4 minutes until golden on both sides. Remove from the pan and keep warm whilst cooking the other Rosti.
3. Meanwhile preheat the grill to medium and cook the bacon for 2-3 minutes or until crispy. Serve 3 rosti each with the bacon on top.

Tip

1. You could serve this with a large green salad for lunch.
