Fluffy American Pancakes

Whether you are celebrating Pancake Day, cooking up breakfast or brunch at the weekend, pancakes are a great way to start your day.
When I'm cooking pancakes for breakfast, I love to make a big pile of fluffy American style pancakes. I find them a little less stressful to cook than the thinner crepe-style pancakes, so they're perfect for a relaxed weekend treat.
And when they are made with Benecol Buttery Taste spread, and topped with Benecol Strawberry Yoghurt, you can still choose a healthier breakfast, as well as one that tastes indulgent.
That's because the Benecol range of foods contains plant stanol ester, a unique patented ingredient which has been shown to lower cholesterol. High cholesterol is a risk factor in the development of coronary heart disease.
The plant stanols work by partially blocking the uptake of cholesterol in the gut, which means less gets absorbed into your blood stream.
Benecol is available in a variety of delicious products including yogurts, yogurt drinks and spreads. So by enjoying Benecol® foods daily, as part of a healthy diet, you could lower your cholesterol by 7 to 10% 2-3 weeks when 1.5g to 2.4g of plant stanols are consumed daily.
These pancakes are great to eat with a simple drizzle of syrup. But for a truly indulgent start to the morning, why not make my simple Banana and Strawberry Compote and top it all off with Benecol Strawberry yoghurt.
Method: Fluffy American Pancakes
Sift the flour into a large bowl, and then add the salt, baking powder and caster sugar. Mix them all together thoroughly.
Pour in the milk, beaten egg and cooled melted Benecol Buttery Taste.
Whisk well until the batter is completely smooth. If you have any lumps remaining, they will soon disappear. Let the batter stand for a few minutes before using.
Heat a non-stick frying pan over a medium heat. Most non-stick pans won't need to be greased, but if yours does, just add a little Benecol Buttery Taste to the pan.
When the pan is hot, add a ladle of the thick batter to the pan. If your pan is big enough, you can cook 2 or even 3 pancakes at the same time.
Leave it for a minute or so, until you start to see bubbles forming on the top of the pancake.
Then flip the pancake over carefully, and cook for another minute until the pancake is golden brown on both sides.
Repeat until you've used all of the batter. You can keep the pancakes warm in a low oven if you want to serve them all at the same time, but they taste best when you eat them fresh from the pan!
My Top Tip:
If you're serving this for breakfast or brunch, you can get ahead by doing some of the preparation the night before.
Measure out and mix the dry ingredients together, and leave in a covered bowl. Measure out the milk and leave in a jug in the fridge, together with the measured amount of Benecol Buttery Taste.
Then in the morning, you just need to melt the Benecol Buttery Taste, whisk the egg and mix everything together.
Why not: Make blueberry pancakes by adding the grated zest of half a lemon and a handful or two of blueberries to the batter before cooking.
Remember: The cholesterol lowering beneficial effect is obtained with a daily intake of 1.5g – 3.0g plant stanols per person.
Method: Banana and Strawberry Compote
Heat a non-stick frying pan over a medium heat, and add the Benecol Buttery Taste spread.
When the Benecol Buttery Taste has melted, stir in the sugar and cook until the sugar has melted. This will take around 5 minutes.
Add the bananas, strawberries and vanilla extract and stir together.
Cook until the fruit has softened, which will take around 10 minutes. If your pan looks a little dry, you can add a teaspoon or two of water.
Serve the compote warm over the pancakes, topped with a Benecol Strawberry yoghurt.
Top Tip: This compote is also ideal for serving over French toast, or you can cool it and stir into a Benecol yoghurt.
